Right, so I've given up on more votes and am going to call it as it is!

With: You may be facing a Graphorn, in which case you and the first year are in big trouble!

The Graphorn is a very dangerous creature and with it's two sharp horns and it's tough hide able to repel most spells, there is not a lot you can use to defend yourself.

The best and quickest course of action for the muggle-born third year would be to cast the 'Impedimenta' jinx at the creature, and then throw the stink pellet from your bag, in case your first spell had no affect on the Graphorn. While doing this, you shout at the first year to run out of the classroom, and you follow suit, locking the creature inside the classroom. You then rush to find a Professor!

Second place:

With: I'm facing a Graphorn, and a spell will not be useful at all because the Graphorn repels spells. So instead I will a Reducing Charm, which will ultamitely cause the Graphorn to be smaller. Then I would use a Freezing Charm to freeze the Graphorn and take him somewhere where he isn't hurting anyone, or let a professor take him somewhere.
