Dumbledore probably wouldn't have died at that exact moment, yeah. Draco may have found a way to kill him differently, but Dumbledore only had, what, a year from when he destroyed the ring? So he would have died within a month or two after that anyway. Before he died, he may have been able to explain more to Harry about the horcruxes and I think Harry would have still gone off on the hunt, seeing as it's because of the horcruxes Dumbledore would die (from either the liquid or ring).
