Party in the Dungeons!
It's Wednesday. The Potions Club is meeting late and being generally awesome. Snape comes in and tells us he's going to bed, to lock up when we're done, not to touch anything What he does not tell us is that we may not throw a huge freaking party and invite everyone from HIH. So, that's what we do!

PEANUT BUTTER CUPCAKES W/ CREAM CHEESE ICING
Makes approx 12-16
INGREDIENTS:
For the cupcakes
- 55g softened butter (or soft tub margerine)
- 225g brown sugar
- 115g crunchy peanut butter
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 225g plain white flour
- 2 tsp baking powder
- 100ml milk
For the icing
- 200g full-fat soft cream cheese
- 25g softened butter
- 225g icing sugar
BAKING TIME, YEAH!:
- Preheat oven to 180°C (160°C for fan forced oven)/350°F/Gas Mark 4. Place cupcake cases in cupcake/muffin tray.
- Put the butter, brown sugar, and peanut butter in a bowl and beat together for 1-2 minutes, or until well mixed. Gradually add the eggs, beating well after each addition (aka, don't add them all in at once), then add the vanilla extract. Sift in the flour and baking powder and then, using a METAL SPOON, fold them into the mixture, alternating with the milk. Spoon the micture into the paper cases.
- Bake the cupcakes in the preheated oven for 25 minutes, or until well risen and golden brown. Transfer to a wire rack and leave to cool.
- To make the frosting, put the cream cheese and butter in a large bowl and, using an electric hand whisk/mixer, beat together until smooth. Sift the icing sugar into the mixture, then beat together until well mixed.
- When the cupcakes are cold, spread the frosting on top of each cupcake, swirling it with a round bladed knife. Store the cupcakes in the refridgerator until ready to serve.
I MAKE THESE ALL THE TIME AND USUALLY DEVOUR THEM WITHIN 24 HRS :(
